Marinate 1 kg mutton with 0.5 cup yogurt, 2 tablespoons ginger-garlic paste, 2 tablespoons green chili paste, 2 tablespoons biryani masala, 2 tablespoons coriander powder, 1 teaspoon turmeric powder, 1 teaspoon red chili powder, and 1 tablespoon salt. Mix well and let it sit for 30 minutes.

In a pressure cooker, heat 0.5 cup oil and add whole spices (cloves, cardamom, cumin, black pepper, cinnamon, and bay leaf).

Once spices are fragrant, add the marinated mutton and sauté until the oil separates from the mutton.

Add 1 cup water and mix well. Close the lid and cook for 3-4 whistles in the pressure cooker.

In a separate pot, bring 3 liters of water to a boil and add the whole spices and 2 tablespoons salt.

Add 1 kg soaked basmati rice to the boiling water and cook until 80% done. Drain the rice.

Check the mutton; if cooked, reduce the water until oil rises to the top. Turn off the heat.

Layer half of the rice in a pot, then add the mutton, followed by the remaining rice.

Top with fried onions, cilantro, mint leaves, cashews, kewra essence mixed with 0.5 cup milk, and red food color.

Seal the pot with aluminum foil and a lid, then cook on high flame for 10-15 minutes, then reduce to low flame for the same duration.

Once done, serve the mutton biryani.
