Taiwanese Style Hot Pot
Cultural Context
Taiwanese hot pot, or steamboat, is a beloved communal dining experience where diners cook their own ingredients in a simmering pot of broth at the table. This style of meal promotes social interaction and sharing, making it a popular choice for gatherings and celebrations. In Taiwan, hot pot can be customized with a variety of broths and ingredients, reflecting regional flavors and personal preferences. Today, it has gained popularity worldwide, with many variations emerging in different cultures.

Zucchini noodles are lower in carbs, while rice is a staple and often cheaper.
Prepare a portable electric skillet and fill it about 3/4 full with water.
Add 2 tablespoons of chicken stock and chicken bouillon to the water.
Add 3 slices of ginger, 3 peeled garlic cloves, and 5 dried chili pods to the water.
Trim and add the bottom of napa cabbage to the pot for flavor.
Optionally, add scraps of yellow onion and a few sprigs of cilantro to the broth.
Cover the skillet and let the broth come to a boil and simmer for a few minutes.
Prepare a sauce by mixing a few spoonfuls of Bullhead barbecue sauce with 1 raw egg, chopped yellow onions, and green onions.
Once the broth is boiling, guests can start adding their chosen ingredients into the pot to cook.
Cook pork longer than other meats to ensure it's safe to eat, and use separate chopsticks for raw meat and cooked meat.
Serve the cooked ingredients with the prepared sauce and additional garnishes like sea salt, yellow onions, and green onions.
