1

In a mixing bowl, combine 7 grams (1 tablespoon) of flaxseed meal and 45 grams (3 tablespoons) of water. Mix well and let rest for about 5 minutes.

2

Pour 70 grams (1/3 cup) of vegetable oil into the bowl of a stand mixer.

3

Add 9 grams (2 teaspoons) of vanilla extract and 45 grams (3 tablespoons) of water to the bowl.

4

Add 100 grams (1/2 cup) of brown sugar and 65 grams (1/3 cup) of granulated sugar to the mixture.

5

Add 3 grams (1/2 teaspoon) of baking soda and 3 grams (1/2 teaspoon) of baking powder.

6

Fit the stand mixer with the paddle attachment and mix all ingredients at low speed for about 30 seconds.

7

Add the flaxseed meal and water mixture and 240 grams (2 cups) of gluten-free flour to the bowl.

8

Add 3 grams (1/2 teaspoon) of salt to the mixture.

9

Mix the dough at low speed for a couple of minutes until well combined.

10

Add 340 grams (2 cups) of chocolate chips, a mix of 70% dark chocolate and semi-sweet chocolate chips, to the dough.

11

Mix the dough for about 15 seconds to incorporate the chocolate chips.

12

Scoop balls of cookie dough using a big cookie scoop and place them on a prepared baking sheet lined with a silicone mat or parchment paper, leaving space between each cookie.

13

If desired, prepare the cookie dough in advance and refrigerate in a covered container for up to two days.

14

Preheat the oven to 350°F (180°C) and bake the cookies for about 18 minutes or until golden brown, adjusting time if using a smaller scoop (12-14 minutes).
