Combine beef and pork in a bowl, ensuring the meat is cold.
Pass the meat through a meat grinder twice for a fine texture.
Prepare a spice mix using whole black pepper, dried thyme, cumin seeds, coriander seeds, and paprika.
Add salt and baking soda to the spice mix.
Crush 7 cloves of garlic and add to the mixture.
Pour in 200 ml of ice carbonated water and mix well.
Let the mixture rest for 15 minutes in the mixer to develop texture.
Transfer the mixture to a container and refrigerate for 24 hours or at least 5 hours before cooking.
After resting, load the mixture into a sausage stuffer and form sausages.
Prepare the grill by lighting charcoal and letting it heat up for 10 minutes before cooking the sausages.
