Frozen cherries are available year-round.
Add flour, butter, sour cream, vanilla extract, and three scoops of powdered sugar into a mixing bowl.
Attach the beater and start on slow speed to prevent flour from going everywhere, then increase the speed.
Stop the mixer and take out the dough, knead it by hand for about 2-3 minutes until well incorporated.
Cover the dough with plastic wrap and cool in the fridge for about 5-10 minutes.
Once cooled, rub the dough and cut it into four equal chunks, then roll each chunk into a ball.
Sprinkle flour on the cutting board and roll the dough into a large circle.
Use a circular dish as a guide to cut the dough into a perfect circle, removing the excess.
Cut the circle into triangle slices, and cut the cherries in half if they are too big, placing one half on each slice.
Preheat the oven to 350°F (175°C) and bake for 30-35 minutes, checking them periodically.
Start baking on a lower rack for about 15 minutes, then move the baking pan to a higher rack until golden brown.
Let the croissants cool for 10 minutes after taking them out of the oven.
Roll each croissant in powdered sugar before serving.
