2 cups red kidney beans

half a can coconut cream

Soak 2 cups of red kidney beans overnight with spring onion, thyme, and garlic, or for about 5-6 hours if short on time.

Cook the soaked beans on medium heat for at least 1 hour until soft.

Remove the thyme stalks from the cooked beans.

Add 2 scotch bonnet peppers, 1 teaspoon of salt, 1 tablespoon of all-purpose seasoning, and 2 tablespoons of black pepper to the beans and stir.

Add half a can of coconut cream to the beans and mix well, cutting it into pieces for easier dissolving if necessary.

Wash and add 3.5 cups of basmati rice to the beans.

Ensure the liquid level is about 1 inch above the beans and cover to cook.

After about 6 minutes on low to medium heat, check the water level and gently stir to prevent burning.

Reduce heat to minimum and add 1 tablespoon of water to aid steaming, then cover and let steam.

After 20 minutes of steaming, check the rice; it should be fully cooked and fluffy. Use a fork to separate the rice.
