Thinly dice the onion.

Add the onion to the pan with olive oil and fry for about 2 minutes.

Cover with a smaller tortilla and sprinkle more mozzarella cheese on the edges.

Fold the sides of the tortilla to hold the filling in place and cover with a plate to maintain the shape.

Heat olive oil or butter in a pan over medium heat and flip the tortilla using the plate.

Transfer the tortilla to the pan and brush some oil on top.

Fry for 3 minutes, then use the plate to flip the tortilla over and fry for another 2-3 minutes.
