Wash the potatoes.
Cut the potatoes into pieces and boil them in water until soft, about 15-20 minutes.
Check the potatoes with a fork to ensure they are soft enough to break apart.
Cut the ham into small cubes.
Cut the mozzarella into strips and then into small cubes.
Drain the boiled potatoes and let them cool slightly.
Mash the potatoes while keeping the skin on top, ensuring they are warm for easier mashing.
Let the mashed potatoes cool for about 5 minutes before adding other ingredients.
Add chopped parsley, pecorino cheese, nutmeg, salt, black pepper, and one egg to the mashed potatoes and mix well.
If the mixture is too soft, add breadcrumbs to firm it up.
Wet your hands with water to shape the croquettes.
Take a portion of the mixture, make a hole in it, and fill it with ham and mozzarella, then close it up.
Shape the croquettes into desired forms (long or round) and place them on baking paper.
Prepare an egg wash with the second egg and set up breadcrumbs for coating.
Dip each croquette in the egg wash using one hand, then coat with breadcrumbs using the other hand.
Let the coated croquettes rest for about 5 minutes to firm up.
Heat sunflower oil in a frying pan until hot.
Fry the croquettes in batches, about five at a time, until golden brown.
