Low-sodium soy sauce has less sodium.
Heat the wok until it's very hot, almost smoking.
Add oil to the hot wok and spread it out.
Add chicken pieces to the wok and let them sear for about 2 minutes without stirring.
After 2 minutes, stir the chicken to sear the other side for another minute.
Add onions to the wok and let them cook for a moment.
Add garlic and ginger to the wok and stir.
Add bell peppers to the wok and stir everything together.
Add soy sauce and dark soy sauce to the wok.
Add ketchup for sweetness and tang.
Add vinegar for extra tang.
Add sugar to balance the flavors and chili powder for spice.
Toss everything together and check the sauce consistency.
If the sauce is too runny, mix corn flour with water and add it to the wok to thicken the sauce.
