This dish is often prepared in households as a simple yet flavorful meal, showcasing the use of spices and fresh ingredients. It holds a special place in Indian cuisine, particularly in vegetarian diets, and is enjoyed with rice or flatbreads. Modern variations may include additional vegetables or spices, adapting to regional tastes and preferences.

Chickpeas offer similar protein content, while pinto beans are often less expensive.
Soak 1.5 cups black-eyed peas for 7-8 hours and drain them.
In a pressure cooker, add the soaked black-eyed peas with some water and cook for 2 whistles.
In a pan, heat 3 tablespoons mustard oil.
Add 5-6 cloves, 2 bay leaves, 2 large cardamom pods, 3 small cardamom pods, 1 piece of cinnamon stick, and 1 dry red chili to the oil and let them sizzle.
Add 1 tablespoon ginger paste and 1 tablespoon garlic paste to the pan and sauté.
Add 3 finely chopped medium onions and fry until golden brown.
Once the onions are golden brown, add the sautéed ginger and garlic paste and cook together.
Add the dry spices: 0.5 teaspoon cumin seeds, 0.5 teaspoon black pepper, 2 teaspoons coriander powder, 1 teaspoon turmeric powder, and salt to taste; mix well.
Add 0.5 cup tomato puree to the pan and cook until the tomatoes are well combined with the spices.
Add the cooked black-eyed peas to the spice mixture and stir to combine.
Cover the pan and let it cook on low heat for 5-7 minutes.
Finally, add 1 teaspoon garam masala and garnish with chopped cilantro before serving.
