1 piece of cinnamon stick
1 dry red chili
0.5 teaspoon cumin seeds
0.5 teaspoon black pepper
2 teaspoons coriander powder
2 teaspoons MDH Kitchen King masala
1 teaspoon garam masala
red chili powder to taste
3 tablespoons mustard oil

Soak 1.5 cups black-eyed peas for 7-8 hours and drain them.

In a pressure cooker, add the soaked black-eyed peas with some water and cook for 2 whistles.

In a pan, heat 3 tablespoons mustard oil.

Add 5-6 cloves, 2 bay leaves, 2 large cardamom pods, 3 small cardamom pods, 1 piece of cinnamon stick, and 1 dry red chili to the oil and let them sizzle.

Add 1 tablespoon ginger paste and 1 tablespoon garlic paste to the pan and sauté.

Add 3 finely chopped medium onions and fry until golden brown.

Once the onions are golden brown, add the sautéed ginger and garlic paste and cook together.

Add the dry spices: 0.5 teaspoon cumin seeds, 0.5 teaspoon black pepper, 2 teaspoons coriander powder, 1 teaspoon turmeric powder, and salt to taste; mix well.

Add 0.5 cup tomato puree to the pan and cook until the tomatoes are well combined with the spices.

Add the cooked black-eyed peas to the spice mixture and stir to combine.

Cover the pan and let it cook on low heat for 5-7 minutes.

Finally, add 1 teaspoon garam masala and garnish with chopped cilantro before serving.
