Heat 1 cup of olive oil in a large pot over medium heat.

Add 1 cup of all-purpose flour to the oil and cook for about 30 to 40 minutes until it reaches a deep chocolate color.

Halfway through, season the mixture with Cajun seasoning to taste.

Once the roux is a peanut butter color, add diced onion, bell pepper, and celery to the pot.
