Bulgogi, meaning 'fire meat,' originates from Korea and is a beloved dish made with marinated beef grilled or stir-fried. Traditionally served with rice and side dishes, it has evolved into various forms, including these fresh spring rolls. These rolls celebrate the vibrant flavors of Korean cuisine and have gained popularity beyond Korea, often enjoyed in fusion dishes worldwide.

Grate 2 cloves of garlic into a mixing bowl.
Grate a NY pear finely and add it to the bowl.
Add sesame seeds to the bowl, reserving some for the dipping sauce.
Add white sugar to the bowl, reserving some for the dipping sauce.
Drizzle soy sauce into the bowl.
Add sesame oil to the bowl.
Mix the marinade until well combined.
Slice the scotch fillet (ribeye) thinly and add it to the marinade, tossing to coat.
Cover the bowl with glad wrap and marinate in the fridge for at least 2 hours, preferably overnight.
Heat a frying pan until hot and drizzle with olive oil.
Fry the marinated beef for 2-3 minutes until cooked, noting that it will continue to cook when frying the spring rolls.
Prepare the dipping sauce by mixing spring onions, reserved white sugar, sesame seeds, gochujang, soy sauce, and sesame oil in a bowl.
Let the beef cool down before assembling the spring rolls to prevent wrappers from falling apart.
Soak spring roll wrappers under a damp tea towel to keep them moist.
Peel one spring roll wrapper onto a clean surface.
Place a handful of cooked vermicelli noodles in the center of the wrapper.
Add a layer of kimchi on top of the noodles.
Add a portion of the cooked bulgogi beef on top of the kimchi.
Sprinkle some sliced spring onions on top of the beef.
Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly from the bottom up.
Use a little water to seal the edges of the spring roll.
Repeat the process until all ingredients are used.
Plate the spring rolls and serve with the dipping sauce.
