Avocado Egg Toast

1 large avocado
2 large eggs

Cut the large avocado in half around the seed and remove the seed.

Scoop out a little bit of the avocado flesh to make room for the egg.

Sprinkle a little salt and pepper into the hollow of each avocado half.

Place the avocado halves on a pan, pressing down slightly to create a flat bottom.

Crack a large egg into each avocado half, being careful not to break the yolk.

Sprinkle a little salt and pepper on top of the eggs.

Bake in the oven at 425°F for about 15 minutes, keeping an eye on the eggs until the whites are fully cooked.

Once done, sprinkle chopped parsley and bacon on top of the baked avocado eggs.

Add feta cheese on top of the avocado eggs before serving.

Scoop out another avocado and place it on a piece of toast, adding bacon and feta cheese on top for an avocado and egg toast.
