Cut the beef, chicken, and pork into large chunks.
Season the meat with salt, black pepper, and lime juice.
Heat a large pot over medium heat and add the seasoned meat.
Brown the meat for about 5-7 minutes, stirring occasionally.
Add chopped onions, garlic, and bell peppers to the pot and sauté until fragrant, about 3-4 minutes.
Pour in enough water to cover the meat and bring to a boil.
Reduce heat to low and simmer for 30-40 minutes, skimming any foam that forms.
Add chopped yuca, plantains, corn, potatoes, and carrots to the pot.
Continue to simmer for another 20-30 minutes, or until vegetables are tender.
Stir in chopped cilantro and bay leaves, cooking for an additional 5 minutes.
Taste and adjust seasoning if necessary before serving.
