Make the tomato sauce by combining whole tomatoes, pure olive oil, chopped onion, minced garlic, dried red chili pepper, salt, and sugar.

In a skillet, heat some EXV olive oil and add the prepared tomato sauce.

Add water to the skillet and bring to a simmer.

Create small wells in the sauce and crack 2 eggs into each well.

Cover the skillet and cook until the eggs are set to your liking.

Garnish with dried parsley before serving with baguette and optional powdered cheese and tabasco.
