Wash the 3 lbs of stewing beef with lemon juice and cool water, then drain completely.
Season the beef with salt, a diced tomato, garlic, black pepper, and a small diced onion.
Add 1.5 tablespoons of Caribbean green seasoning to the beef and mix well.
Cover the beef mixture with plastic wrap and let it marinate in the fridge for a couple of hours.
In a heavy pot, heat 1 tablespoon of olive oil and add 1.75 tablespoons of golden brown sugar over medium-high heat.
Stir the sugar until it melts and turns a deep amber color, being careful not to let it burn.
Once the sugar is ready, add the marinated beef to the pot and stir to coat.
Cover the pot with a lid slightly ajar and let it cook for about 10-15 minutes to develop its own juices.
After about 10 minutes, stir the mixture and then increase the heat to burn off the liquid for more flavor and color.
Add 1 cup of coconut milk and the reserved 2 cups of water to the pot, stirring to combine.
Bring the mixture to a boil, then reduce to a rolling boil and cook for 30 minutes without a lid.
After 30 minutes, add the rinsed red kidney beans to the pot and stir gently.
Adjust the heat to bring the mixture back up to a boil, then cover slightly and let it simmer for another 30 minutes.
Check the beef for tenderness and adjust salt to taste before serving.
Finish the dish with chopped parsley for garnish.
