600 grams stewing steak
2 small onions, sliced
2 small carrots
2 small potatoes
400 grams tomato sauce
1 tablespoon turmeric
1 tablespoon cardamom pods
1 cinnamon stick
1 tablespoon smoked paprika
1 tablespoon garam masala
1 tablespoon ginger
1 tablespoon Moroccan seasoning
1 tablespoon ground fennel
4 cloves garlic
1 tablespoon all-purpose flour
vegetable oil
salt
pepper
olive oil
bay leaf
spring onion
cilantro or coriander
flaked chili
rice or couscous

Heat a cast iron skillet and add a little vegetable oil, seasoning with salt and pepper.

Mix the spices into the stewing steak and add the all-purpose flour.

Add a little olive oil to the heated cast iron skillet.

Cook the meat in batches of two or three to avoid overcrowding, until golden brown.

Add the sliced onions, burying them under the meat to cook with the spices.

Add the garlic, bay leaf, and tomato sauce to the pan.

Toss in the carrots and place the potatoes on top.

Cover the pan and cook for about 1.5 to 2 hours until the meat is tender.

Remove the lid after cooking to check the dish; it should be tender and well-cooked.

Serve with rice or couscous, garnished with spring onion, cilantro or coriander, and flaked chili.
