500 grams dried coconut (coarse grated)
10 kafir lime leaves (remove the stem and chop finely)
3 tablespoons grated brown sugar
5 cm kencur (aromatic ginger)
2 tablespoons shrimp paste
8 cloves garlic (minced)
Chili (to taste)
250 cc coconut cream
Salt (to taste)
Assorted steamed vegetables

In a mixing bowl, combine the grated coconut, chopped green beans, grated carrots, and bean sprouts.

In a separate bowl, mix the tamarind juice, palm sugar, salt, chopped red chilies, turmeric powder, and lime juice until well combined.

Pour the tamarind mixture over the coconut and vegetable mixture.

Toss everything together until the vegetables are evenly coated with the dressing.

Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.

Let the mixture sit for about 10 minutes to allow the flavors to meld.
