Sweet Corn Curry

1 sweet corn cob
½ medium sized fresh coconut
2 green chillies
½ inch ginger
3 medium sized diced tomatoes
½ cup water
3 tbsp oil
2 bay leaves
3 cloves
½ tsp mustard seeds
¼th tsp fenugreek seed
½ tsp cumin seed
½ tsp turmeric powder
¼th cup water
Salt to taste
1 tsp red chilli powder
1 tbsp coriander powder
1 tsp garam masala
½ cup water
2 tbsp chopped coriander leaves

Heat oil in a pan and add bay leaves, cloves, mustard seeds, fenugreek seeds, and cumin seeds. Saute until fragrant.

Add ginger and green chillies, and sauté for a minute.

Add diced tomatoes and cook until they soften.

Add turmeric powder, red chilli powder, coriander powder, and salt. Mix well.

Add sweet corn kernels and fresh coconut. Stir to combine.

Pour in water and bring to a simmer. Cook until the corn is tender.

Finish with garam masala and chopped coriander leaves before serving.
