Sweet Corn Curry

3 tomatoes roughly chopped
1 celery stick chopped (optional)
8 cashews
1-inch ginger peeled and chopped
1 green chili chopped
2 cups sweet corn (fresh or frozen)
2 tsp oil
½ tsp cumin seeds
¼ tsp asafoetida (Hing)
½ tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1 tsp garam masala
Salt to taste
½ cup water or as required
2 tbsp cream or whisked yogurt
1 tsp crushed Kasoori methi (dried fenugreek leaves)
2 tbsp chopped coriander leaves

Prepare the tomato puree by blending the chopped tomatoes, celery, cashews, ginger, and green chili until smooth.

In a pan, heat the oil and add cumin seeds and asafoetida.

Add the prepared tomato puree to the pan and cook for a few minutes.

Stir in the turmeric powder, red chili powder, coriander powder, and garam masala.

Add the sweet corn and salt to taste, followed by water as needed to adjust the consistency.

Let it simmer for a few minutes until the corn is cooked.

Finish with cream or whisked yogurt, crushed Kasoori methi, and chopped coriander leaves.
