1

Pick out Madagascar beans from the garden, selecting those in green pods that are not quite dry.

2

Gather additional vegetables from the garden including kale, tromboncino squash, white icicle daikon radish, red onion, button squash, zucchini, garlic, chanteray carrots, chilies, butter beans, Cherokee wax beans, tender green beans, and Chinese cabbage.

3

Strip the leaves off the Chinese cabbage due to pest damage and prepare the usable leaves.

4

Chop and prepare the vegetables for the minestrone, including the kale, zucchini, carrots, and any other chosen vegetables.

5

Add Madagascar beans to the slow cooker along with a pinch of salt and a pinch of bicarbonate of soda to help them cook faster.

6

Add the chopped vegetables to the slow cooker with the beans.

7

Drizzle a swirl of good quality olive oil into the slow cooker.

8

Squeeze in some lemon juice for flavor.

9

Add cherry tomatoes to the mixture.
