Start by preparing the parmesan cream sauce to add pockets of cream throughout the lasagna.
Grab seasoned tomato sauce for the meat sauce base.
Dice about 4 ounces of prosciutto and add it to the meat sauce.
Use 3/4 pound each of ground beef and ground pork for the meat sauce.
Pulse onion, celery, and carrot in a food processor until finely chopped for the sofrito.
Add the sofrito to a pan with 1/4 cup of extra virgin olive oil and cook for about 10 minutes on medium heat until softened and water has evaporated.
Add crushed red pepper and nutmeg to the sofrito mixture.
Prepare a unique spice blend with cinnamon, curry powder, nutmeg, and garam masala, using about 2 teaspoons for the lasagna.
Add the diced prosciutto to the sofrito mixture and stir.
Add the ground beef and pork to the pan, breaking it up into small pieces and cooking for about 5-6 minutes until browned.
Pour in 1 cup of red wine and let it cook for about 10 minutes until dry on the bottom.
Add a full package (24 ounces) of seasoned tomato sauce and 1 3/4 cups of water to the meat mixture, along with salt and pepper.
Cover the pan and let the sauce cook on low heat for about 15 minutes to meld the flavors.
Cook the fresh lasagna sheets according to package directions before assembling the lasagna.
Spray the bottom of the baking pan with pan spray to prevent sticking.
Spread about 1 cup of meat rag on the bottom of the pan as a wet coating for the noodles.
Place the first layer of lasagna noodles in the pan, ensuring they do not overlap.
Add 3/4 cup of meat rag over the noodles, spreading it evenly.
Drizzle 3/4 cup of parmesan cream sauce over the meat rag layer.
Sprinkle a small amount of parmesan cheese and black pepper on top of the cream sauce.
Repeat the layering process two more times with the same amounts of meat rag, cream sauce, parmesan cheese, and black pepper.
For the final layer, place one more sheet of lasagna on top and add double the amount of sauce (1 1/2 cups) to cover the top evenly.
Spread the remaining sauce over the top layer and sprinkle with parmesan cheese and black pepper.
Cover the lasagna with aluminum foil and bake in the oven at 350°F for about 50 minutes.
Remove the foil and bake for an additional 15 minutes to brown the top.
Let the lasagna rest for about 15 minutes before slicing.
