1kg small eggplants, slit in the middle
1/2 cup cooking oil
1tsp cumin seeds
1 bay leaf
1tsp turmeric
1tsp chilli powder
4 medium onions, toasted and puréed
4tbsp peanuts, toasted
2tbsp sesame seeds, toasted
3tbsp coriander seeds, toasted
2tbsp dried coconuts, toasted
1tbsp cumin seeds, toasted
2tbsp sesame seeds, toasted
6 whole red chillis, toasted
Salt, as per your taste
1cup water
1/2 cup tamarind paste

Toast all your spices and onions. Blend with water to make a paste. Add salt, chilli powder and turmeric to it as well.

Slit eggplants in the middle and spoon in the masala paste in each one of them.

Heat oil in pan and add the one teaspoon cumin seeds and bay leaf.

Then immediately place stuffed eggplants in pan. Fry from both sides till golden.

Add the remaining masala paste to the pan, cover and cook on low till the eggplants are cooked through and the masala has oil coming from it.

Add tamarind paste to the pan, and cook with eggplants for five minutes.

Transfer to serving platter and garnish with chopped coriander.
