Preheat the oven to 350°F.

Prepare the Ankarsrum stand mixer by attaching the bowl and paddles.

Cream together 1 stick of butter and 1/2 cup of shortening with 3 cups of sugar until combined.

Add 5 eggs one at a time, mixing well after each addition.

In a separate bowl, combine 2 cups of flour, 1/2 teaspoon salt, and 1 tablespoon baking powder.

Gradually add the dry ingredients to the wet mixture, alternating with 1 cup of almond milk and 1 teaspoon of vanilla extract, starting and ending with the dry ingredients.

Grease a medium-sized loaf pan with olive oil spray.

Pour the batter into the greased loaf pan, filling it evenly.

If there is extra batter, pour it into a smaller star-shaped pan.

Bake the loaf for 1 hour and 5 minutes, checking for doneness with a toothpick.

Bake the star-shaped cake for about 45 minutes, checking for doneness as well.

Let the cakes cool slightly before attempting to remove them from the pans.
