Moroccan Beef Tajine with Potatoes

Drizzle olive oil in a cooking pot.
Grate the onion and squeeze out excess water before adding it to the pot.
Add the beef, crushed garlic cloves, and all the spices to the pot.
Mix all the ingredients using a wooden spoon.
Cover the pot and cook the meat on medium heat for around 5 minutes, turning the meat pieces to brown all sides.
After browning the meat, add 2 cups of cold water (500 ml) to the pot.
Cover the pot, increase the heat to medium-high, and cook the meat until done, which will take around 45 minutes to 1 hour.
Check on the meat from time to time, adding water if necessary to keep it half-covered with sauce.
Taste the meat at the end to check if it is tender and soft.
While the meat is cooking, peel and quarter the potatoes, ensuring they are medium-sized pieces to avoid overcooking.
Once the meat is done, remove it from the pot and place it in a bowl.
Place the potatoes (without the water) in the pot and add 1 cup of water until the potatoes are half-covered.
Cover the pot and cook the potatoes on medium-high heat for 5 minutes.
After 5 minutes, taste the sauce and adjust the seasoning with salt, pepper, and ground ginger, adding more water if necessary.
Cook the potatoes for around 10-15 minutes until they are soft but still hold their shape.
Once the potatoes are ready, put the meat back into the pot with the potatoes.
Add the olives to the pot.
Uncover the pot, increase the heat to high, and let the tajine cook for around 5 minutes until the sauce reduces and thickens.
To serve, place the meat first, then arrange the potatoes around it, pour the sauce over, and decorate with olives.
