16 cups water
1 cup sugar

1/2 teaspoon green food color

Wash 4 cups of rice thoroughly until soft.

Soak the rice for at least 1 hour if using basmati, or 1.5 hours for other rice varieties.

In a large pot, bring 16 cups of water to a boil.

Add the soaked rice to the boiling water and cook for about 18 minutes until it's 90% done.

Check the rice by pressing it between your fingers; it should be soft but not mushy.

Once the rice is 90% cooked, drain the water and set the rice aside.

In the same pot, add the partially cooked rice back in and spread it evenly.

Add 1 cup of sugar over the rice evenly.

Mix gently with a light hand to avoid breaking the rice grains.

Add 1/2 cup of grated coconut and 1 cup of mixed dry fruits, mixing lightly again.

Reduce the heat to low and cover the pot to let it steam for about 8-10 minutes.

After 10 minutes, check the moisture level in the rice; if it's dry, flatten the rice again.

Add food colors: 1/2 teaspoon yellow and 1/2 teaspoon green, mixing them in gently.

If using powdered color, mix it with a tablespoon of water before adding.

Cover the pot again and let it steam for another 8-10 minutes.

Once done, fluff the rice gently with a fork and serve.
