Wash the spinach thoroughly under cold running water.

Soak the spinach in a bowl with bicarbonate for about 10 minutes.

Drain and rinse the spinach a couple of times.

Place the spinach in a pan over high heat without adding water.

If the spinach doesn't all fit, wait for the first batch to wilt before adding more.

Cover the pan to help the spinach wilt down.

After 2-3 minutes, check how much the spinach has reduced and add some salt.

Cover again and cook for another 2-3 minutes.

Turn off the heat and add butter, mixing it in as if you were stirring risotto.

Once the butter is melted, add parmesan and mix well.

Add a bit of nutmeg and give it a quick stir before serving.
