1 cup yellow onions, chopped
1 cup green bell peppers, chopped
2 cups tomatoes, chopped
1 teaspoon sea salt
1 teaspoon black pepper
3 cloves garlic, minced
2 tablespoons curry powder
1 cup heavy whipping cream
1 cup coconut milk
3 cups rotisserie chicken, shredded
1 tablespoon monk fruit sweetener
2 cups cauliflower rice
1/4 cup cilantro, chopped
2 jalapenos, sliced

Heat up a skillet and add olive oil.

Sautee yellow onions, green bell peppers, and tomatoes with salt and pepper until the tomatoes become mushy, about 3 to 4 minutes.

Add about four cloves of chopped garlic and curry powder to the skillet and mix everything until the curry powder becomes fragrant and everything is coated.

Add in heavy whipping cream and a can of coconut milk (or coconut cream with added water) to stretch the sauce.
