3 clove garlic (chopped)
1 inch ginger (julienne)
1 chilli (slit)
½ onion (finely chopped)
½ tsp turmeric
1 tsp chilli powder
1 tsp coriander powder
½ tsp salt
2 tomato (chopped)
2 tbsp tomato sauce
½ tsp garam masala
¼ tsp pepper powder
2 tbsp coriander (finely chopped)

In a pan, heat 1 tbsp butter. Add ½ onion, 10 beans, ½ carrot, ½ tomato, 3 tbsp peas, and 5 baby corn.

Add ½ tsp salt and stir fry on high flame for a minute.

Add ½ yellow capsicum, ½ green capsicum, and ½ red capsicum.

Stir fry until the vegetables shrink slightly yet remain crunchy. Keep aside.

In a large wok, heat 2 tbsp oil. Add 1 tsp cumin, 1 tsp kasuri methi, 3 clove garlic, 1 inch ginger, and 1 chilli.

Saute until the spices turn aromatic.

Add ½ onion and saute until onions turn golden brown.

Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, and ½ tsp salt.

Saute on low flame until the spices turn aromatic.

Add 2 tomato and saute until tomatoes turn mushy.

Add 2 tbsp tomato sauce and mix well forming a saucy consistency.

Add in sauteed vegetables along with ½ tsp garam masala and ¼ tsp pepper powder.

Mix well keeping the flame on high.

Finally, add 2 tbsp coriander and enjoy veg jalfrezi with roti.
