Heat 4 cups of water to about 105°F.
Add 1 and 1/2 teaspoons of sugar and 2 tablespoons of active dry yeast to 1/2 cup of the warm water to bloom the yeast.
In a large pot, combine the remaining 3 and 1/2 cups of warm water, 1/2 cup of brown sugar, 1 cup of sorghum, 1 tablespoon of salt, and 1 stick of butter, heating to about 115°F to melt the butter.
Pour the bloomed yeast mixture into the pot with the other ingredients and stir to combine.
Add 4 cups of rye flour and 9 cups of white bread flour to the mixture and stir for about 8 minutes until combined.
If the dough is sticky, add a little rye flour to help firm it up.
Cover the dough and let it rise in a warm place for about 45 minutes to an hour until doubled in size.
Prepare four loaf pans by buttering them well.
Flour a board generously and turn the dough out onto it.
Divide the dough into four equal pieces using a serrated knife and shape them into loaves.
Place the loaves into the prepared pans and let them rise again for about 30-45 minutes.
