1 medium onion, finely chopped
2 large garlic cloves, finely chopped
1 tablespoon fresh ginger, finely chopped or grated
1 small fresh red chili pepper, finely diced
1 tablespoon tomato paste
3 tablespoons mild or medium curry powder
1 tablespoon soy sauce
1/4 cup natural peanut butter
1 can (13.5 fl. oz / 400 ml) coconut milk
1 can (14 oz / 400 g) chickpeas, drained and rinsed
1 lb (450 g) sweet potatoes, peeled and cut into 1-inch cubes
1/2 cup (100 g) water
2 cups kale, roughly chopped
1/4 cup (30 g) peanuts, chopped
A handful fresh coriander
Salt and pepper to taste

Heat the coconut oil in a large, deep pan and cook the onion for 3-4 minutes over medium heat until translucent.
