5 kilos de masa maíz cascado
3 kilos de carne de cerdo (costilla)
2 kilos de papa
2 tazas de manteca de cerdo
1 kilo de zanahoria
1/2 kilo de vainicas
2 chiles rojos

1/2 litro de aceite de oliva o al gusto
1/2 litro del caldo de la carne
1 cucharada de comino en grano o al gusto

Hidratar la masa agregando suficiente agua y dejar reposar por 1.5 horas.

Cocinar la carne hasta que esté a término medio.

Preparar el picadillo de zanahoria y vainicas sazonando con ajo, cebolla, chile dulce, cúrcuma, paprika y sal.

Cocinar la papa con cebolla, chile, ajo, sal y agregar 2 cucharadas del caldo de carne, tapar y cocinar por 5 minutos.

Con la masa reposada, quitar el exceso de agua y llevar al calor, revolver y agregar manteca de cerdo, ajo, comino y un chile dulce licuado en medio litro de caldo de carne.

Agregar 1/2 litro de aceite de oliva y hervir por 5 minutos.

Envolver los tamales con masa sobre las hojas limpias, agregar picadillo, papa, carne y una hojita de culantro.

Amarrar los tamales en pares y cocinarlos tapados por 1.5 horas.
