Clean conch thoroughly under cold water.

Tenderize conch by pounding it gently with a mallet.

Heat butter in a large pot over medium heat until melted.

Add garlic, onion, and bell pepper; sauté until softened, about 3-4 minutes.

Stir in diced tomato, lime juice, and coconut milk; bring to a simmer.

Add thyme, bay leaves, and scotch bonnet pepper; season with salt and black pepper.

Place cleaned conch in the pot; cover and steam for 20-25 minutes until tender.

Remove from heat and discard bay leaves and scotch bonnet pepper.

Garnish with chopped parsley before serving.

Serve hot with lime wedges.
