Welcome to the ice cream headquarters. Today we're making creamy ice cream without heavy cream.
Start with 5 cups of whole milk. You can use any milk of choice, including coconut or soy milk.
Crack one egg into a bowl and mix it well.
Warm the milk but do not boil it. Once warm, take some of the milk and mix it with the egg to temper it.
In a separate bowl, add 1 tablespoon of corn starch and mix it with some of the warm milk until smooth, ensuring there are no lumps.
Add the smooth corn starch mixture back to the warm milk and mix well.
If the mixture becomes lumpy, strain it to remove lumps.
Add 1 tablespoon of butter (or margarine) to the mixture and mix well.
Allow the mixture to cool down a bit before proceeding.
Add 1 tablespoon of vanilla extract and a pinch of nutmeg for flavor. You can also add milk powder if desired, but keep it simple.
Add condensed milk to taste, adjusting sweetness according to preference.
Pour the mixture into a funnel and tie it in a rubber to freeze.
Place the tied mixture in the freezer for 4 to 6 hours or overnight, depending on your freezer.
After freezing, the ice cream will be ready to serve.
