7 cups hot water
500 g bihon noodles

Pan fry 2 pcs medium size carrots sliced into strips on medium flame setting until lightly toasted, then set aside.

Saute 2 pcs chopped onions on high flame setting for about 20 seconds.

Add 1 head chopped garlic and continue to saute for another 10 seconds.

Add about 600 g chicken thigh fillet chopped into small pieces and let the fat render.

Add 1 tsp salt and ground black pepper.

Add 6 Tbsp soy sauce and 6 Tbsp oyster sauce; mix and reduce on high flame setting.

Add 4 pcs chicken liver sliced into small pieces (optional).

Continue to reduce the soy sauce and oyster sauce on high flame setting.

Add about 7 cups hot water and mix to get toasted flavors from the pan; slow cook for about 5 minutes.

After 5 minutes, separate or strain the meat from the broth.

Add 500 g bihon noodles; set flame on low to medium and let the noodles absorb the flavors of the broth.

Keep cooking on low to medium flame until broth is completely absorbed by the noodles; add back some broth if needed.

Add the pan-fried carrots and the chicken meat.

Add chopped cabbage; turn off the flame and mix thoroughly.
