1 cup dried hominy corn (maíz mote)
1 lb beef short ribs or pork ribs
1/2 lb chorizo sausage, sliced
1/2 lb smoked bacon, diced
1 large onion, chopped
2 cloves garlic, minced
1/2 cup diced butternut squash or pumpkin
1/2 cup diced carrots
1/2 cup diced bell pepper (red or green)
1/2 cup diced potatoes
1/2 cup diced sweet potatoes
1/2 cup chopped scallions
1/2 cup chopped fresh cilantro
2 teaspoons ground cumin
2 teaspoons paprika
Salt and pepper to taste

Soak the dried hominy corn in water overnight, then drain and rinse it.

In a large pot, heat a bit of vegetable oil over medium-high heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

Add the beef or pork ribs, chorizo, and smoked bacon to the pot. Brown the meat on all sides.

Stir in the cumin and paprika.

Add the soaked hominy corn and enough water to cover everything by about 2 inches. Bring to a boil, then reduce heat to low, cover, and simmer for about 1 hour, or until the meat and corn are tender.

Stir in the diced butternut squash, carrots, bell pepper, potatoes, and sweet potatoes. Continue to simmer for another 20-30 minutes, or until the vegetables are tender.

Remove the meat from the pot, shred it, and return it to the soup.

Season with salt and pepper to taste.

Serve the locro hot, garnished with chopped scallions, cilantro, and red pepper flakes if desired.
