3/4 teaspoon salt
1 teaspoon Italian seasoning
1/2 lemon juice
1/2 cup all-purpose flour
1/2 cup wheat flour

Soak 1/2 cup chickpeas for 3-4 hours and boil for 5-6 whistles until cooked.

Let the chickpeas cool, then add them to a mixing bowl.

Add 1-2 green chilies based on desired spiciness.

Add 1 cup coriander with stems, 3/4 teaspoon salt, and 1 teaspoon Italian seasoning.

If you don't have Italian seasoning, you can use chili flakes and oregano.

Add juice of 1/2 lemon and grind the mixture coarsely without adding water.

Transfer the ground mixture to a plate; this will be enough for 3 wraps.

For the wraps, mix 1/2 cup all-purpose flour and 1/2 cup wheat flour to make the dough and roll it out into flatbreads.

Roast the flatbreads until cooked on a non-stick pan.

Slice cabbage, capsicum, tomato, and cucumber into small pieces for filling.

Use plain mayonnaise and add 1 teaspoon peri-peri masala; you can also use tandoori masala or plain mayonnaise.

Heat a little ghee in a non-stick pan and lightly roast one side of the flatbread.

After one side is roasted, flip it and spread the chickpea stuffing evenly on the roasted side.

Add a little ghee on top and flip again to roast the stuffing side until slightly crispy.

Grate cheese or paneer on top of the stuffing if desired.

Place slices of capsicum, cucumber, cabbage, and tomato vertically in the center of the wrap.

Sprinkle a little chat masala on top of the vegetables.

Drizzle the peri-peri flavored mayonnaise over the filling.

Fold the wrap tightly once the bottom side is crispy.

Cut the wrap in half on a chopping board for easier handling.

Repeat the process to make additional wraps, ensuring to spread the chickpea stuffing evenly on the flatbread before roasting.

Roast the wraps for 3-4 minutes until crispy, flipping as necessary.
