EPIC MIDDLE EASTERN FOOD made EASY- Bulgur Pilaf and Kefta Kebab for Summer Gatherings!

Ingredients
- ●1 cup bulgur wheat
- ●2 cups vegetable broth
- ●1 medium onion, chopped
- ●2 cloves garlic, minced
- ●1 medium carrot, diced
- ●1/2 cup bell pepper, diced
- ●1/4 cup fresh parsley, chopped
- ●2 tbsp olive oil
- ●1 tsp cumin
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 tsp red pepper flakes (optional)
Instructions
- 1Rinse the bulgur wheat under cold water and drain.
- 2In a medium saucepan, heat the olive oil over medium heat.
- 3Add the chopped onion and garlic, sauté until the onion is translucent.
- 4Stir in the diced carrot and bell pepper, cooking for another 3-4 minutes.
- 5Add the bulgur wheat to the saucepan, stirring to combine with the vegetables.
- 6Pour in the vegetable broth, and add cumin, salt, black pepper, and red pepper flakes if using.
- 7Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- 8Simmer for about 12-15 minutes, or until the bulgur is tender and the liquid is absorbed.
- 9Remove from heat and let it sit covered for 5 minutes.
- 10Fluff the bulgur with a fork and stir in the chopped parsley before serving.

- ●1/2 tsp paprika
- ●1/2 tsp cinnamon
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 tsp cayenne pepper (optional)
- ●Skewers (soaked in water if wooden)
Instructions
- 1In a large bowl, combine the ground beef, ground lamb, chopped onion, minced garlic, and chopped parsley.
- 2Add the ground cumin, ground coriander, paprika, cinnamon, salt, black pepper, and cayenne pepper to the meat mixture.
- 3Mix all the ingredients thoroughly until well combined.
- 4Divide the mixture into equal portions and shape each portion around a skewer, forming long kebabs.
- 5Preheat the grill to medium-high heat.
- 6Place the kebabs on the grill and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through.
- 7Remove the kebabs from the grill and let them rest for a few minutes before serving.
- 8Serve the kebabs with pita bread, tahini sauce, or a fresh salad.
