Bulgur Pilaf

1 cup medium bulgur
1 medium onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 cup tomatoes, diced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups water
2 cups chicken broth

Turn on medium heat and add olive oil to the pan.

Once the oil is hot, add chopped onion and sauté until golden brown.

Crush garlic between palms and add to the pan, frying until golden brown.

Add chopped tomatoes and cook for a few seconds.

Stir in the medium bulgur and mix well with the ingredients in the pan.

Pour in water and chicken broth, mixing thoroughly.

Increase heat to high and bring to a boil.

Once boiling, reduce heat, season with salt and black pepper, and cover.

Cook for about 10 minutes or until all the water evaporates.
