1 heaped tablespoon tomato puree
2 medium sized tomatoes (grated)
1/2 teaspoon black pepper powder
1/2 teaspoon red pepper flakes
1 teaspoon dried mint
1 teaspoon dried thyme
freshly squeezed lemon juice (to taste)
1.5 cups coarse bulgur wheat
3 cups hot water
finely chopped parsley

Heat 2 tablespoons olive oil and 1 teaspoon butter in a pot.

Stir until butter melts, then add 1 medium sized onion (finely chopped) and sauté for a few seconds.

Add 1 teaspoon salt and sauté for 1-2 minutes on medium flame.

Add 1 small capsicum (bell pepper) finely chopped and half a green Turkish pepper (or green chilli) and stir well.

Add 1 heaped tablespoon tomato puree and mix until combined.

Add 2 medium sized tomatoes (grated) and mix well.

Add 1/2 teaspoon black pepper powder, 1/2 teaspoon red pepper flakes, 1 teaspoon dried mint, and 1 teaspoon dried thyme; mix well for about 1 minute to cook the spices.

Add freshly squeezed lemon juice (to taste).

Add 1.5 cups coarse bulgur wheat and mix well into the tomato and spice mixture, ensuring each grain is coated.

Pour in 3 cups hot water and mix well; bring to a boil.

Cover and cook on low flame until water has been absorbed, about 15 minutes.

Turn off the flame and fluff the bulgur with a fork.

Cover with a damp tea towel and let it rest for 7-10 minutes.
