Authentic Dahitri

1 cup sugar
1 cup water
1/2 tsp green cardamom powder
1 cup all-purpose flour
2 tbsp gram flour
1/4 tsp turmeric

Put 1 cup of curd into a bowl.

Add 2 pinches of salt and 1 tsp of oil to the curd.

Add 1 pinch of baking soda to the mixture.

Mix well and let it rest for 10 to 15 minutes.

Soak 2 tbsp of semolina in 4-5 tbsp of water.

In a separate pot, add 1 cup of sugar and 1 cup of water; turn the flame on.

Boil the mixture for 4-5 minutes on medium flame until the sugar dissolves completely.

Add saffron water to the sugar syrup and cook until it thickens slightly.

Turn off the flame and let the sugar syrup cool.

Once cooled, add 1/2 tsp of green cardamom powder to the syrup and mix well.

In the curd mixture, add 1 cup of all-purpose flour, 2 tbsp of gram flour, and the soaked semolina.

Add 1/4 tsp of turmeric and mix well.

Slowly add water to prepare a smooth batter without lumps.

Heat oil to medium temperature for frying.

Drop the batter into the oil without spreading it too much; it will spread on its own.

Fry until the Dahitri is fluffy and cooked nicely on both sides.

Once cooked, remove from oil and place in the sugar syrup.

Do not keep in the syrup for too long; turn upside down once and take out.

Garnish the Dahitri with pistachio flakes and saffron.
