Mix the dry ingredients: In a medium-sized bowl, combine flour, baking powder, cinnamon, salt, and lemon zest.

Add sugar: Gradually add in 1 cup of sugar to the creamed butter, mixing until well combined.
Add egg and vanilla: Incorporate 1 egg and 1/2 teaspoon of vanilla extract into the mixture, beating for about 2-3 minutes until fluffy.
Combine dry and wet: Gradually mix in the dry ingredients until just combined.
Add oats, walnuts, and raisins: Stir in 1 cup of rolled oats, 3/4 cup of walnut pieces, and 1/2 cup of raisins until evenly distributed.
Add apple: Gently fold in the diced apple to the mixture.
Prepare baking sheet: Line a baking sheet with kitchen paper or grease it.
Scoop dough: Use an ice cream scoop or tablespoon to portion out the cookie dough onto the prepared baking sheet.
Flatten cookies: Use a fork to gently flatten each cookie to about 1/2 inch thick.
Bake: Place in a preheated oven at 350°F (180°C) for 10-11 minutes until the edges start to brown.
Cool: Remove from the oven and let cool slightly before transferring to a wire rack.
