1 cup almond flour

Add butter to the bowl of the mixer.

Add sugar and mix on medium speed until creamed and pale in color.

Add almond extract and an egg, mixing for another 15 seconds.

Scrape down the sides of the bowl to combine ingredients.

Add almond flour into already sifted all-purpose flour to remove lumps.

Add a pinch of salt and half of the flour mixture to the bowl, mixing.

Once mixed, add the second half of the flour mixture and continue mixing until the dough pulls away from the sides of the bowl.

Wrap the dough in plastic wrap and roll it into the corners to prevent drying.

Chill the dough in the refrigerator for 1 hour.

Roll out the dough to about 1/4 inch thick and cut out cookie shapes.

Place cookies on a tray and freeze for 15 minutes to harden.
