Parboil the rice.

In a pan over heat, add vegetable oil and allow it to heat up.

Add chopped onion to the heated oil and sauté.

Add thyme and rosemary to the onion and continue to cook, stirring constantly.

Add 2 tablespoons of tomato paste to the onion and cook for about 8 minutes.

Add vegetable broth and salt to the mixture after the tomato paste is well cooked.

Stir in blended fresh tomatoes, ginger, and garlic, and allow to cook until the tomatoes reduce and oil separates.

Add the parboiled rice to the sauce and stir everything together to control the water added.

Add a little bit of water to the rice and more salt if desired, then cover with a lid and reduce heat to low.

Slice the plantain into small cubes and fry in vegetable oil until golden brown.

Check the rice; if the water is almost dry and the rice is almost cooked, add the fried plantain to the rice.

Add chopped bell pepper and red onion to the rice and stir everything well.

Cover the pot again and let it cook on low heat for another 10 minutes.
