1 tbsp ghee
1 tsp cumin seeds
a few curry leaves
1 tsp salt
a light pinch of red chili powder
a pinch of turmeric powder
1 tsp coriander powder
1 tbsp ghee
a pinch of sugar
half a lemon
fresh cilantro

Wash the sabudana and soak it in a few cups of water for around an hour.

Remove any extra water left after soaking.

Dice one potato, a small piece of ginger, and two green chilies.

Roast 40 g of peanuts for about a minute and crush them to a chunky texture.

Heat 1 tbsp of ghee until hot.

Add ginger, green chilies, 1 tsp cumin seeds, and a few curry leaves to the ghee and roast for about 30 seconds.

Add the diced potatoes and crushed peanuts, cover the pan, and cook for 2-3 minutes until the potatoes are soft.

Add the soaked sabudana to the pan.

Add 1 tsp salt, a light pinch of red chili powder, a pinch of turmeric powder, and 1 tsp coriander powder, mixing well to coat the sabudana.

Add 1 more tbsp of ghee to prevent stickiness and mix well.

Cover and cook for 4-5 minutes until the sabudana turns translucent.

Add a pinch of sugar and the juice of half a lemon, then mix well.
