80g (2 oz) dried glass noodles (mung bean, cellophane, bean thread vermicelli noodles)
300g (14 oz) pork mince
6 small Asian red shallots (or 1 large eschallot), sliced
4 tbsp finely chopped sawtooth coriander (regular coriander as an alternative)
3 tbsp finely chopped spring onion (scallions)
¼ cup mint leaves
2 tbsp raw glutinous rice (for dressing)
4 tbsp fish sauce (for dressing)
2 tbsp finely shaved palm sugar (for dressing)
2 tsp chilli powder (or to taste, for dressing)
3 tbsp lime juice (for dressing)
cabbage, snake beans and spring onion to serve

Place the noodles in a large bowl and cover with warm but not boiling water. Allow to soak for 8-10 minutes or until just tender.

Drain and set aside in a large bowl.

For the dressing, toast the rice in a dry frying pan over high heat until golden brown. Remove from heat and grind rice to a fine powder.
