1 cup flour

4 large or 6 medium tomatoes
4 celery sticks

2 dozen baby potatoes
Tomato puree
3 beef stock cubes
¾ bottle red wine
4-6 bay leaves
Salt and pepper to taste
Worcestershire sauce

1 teaspoon cumin seeds
1 teaspoon ground turmeric
1 teaspoon cayenne pepper
2 teaspoons ginger

Heat the vegetable oil in a large potjie (cast iron pot) over medium-high heat.

Pat dry oxtail pieces with paper towel.

Cover the oxtail pieces with flour – season with salt and pepper to taste.

Add oxtail pieces to the pot and brown on all sides, working in batches if necessary.

Remove the oxtail from the pot and set aside.
