Juicy Salt Pork

500g pork shoulder loin
1 teaspoon salt

200g Daikon radish
50g carrots
1/2 teaspoon salt
1 tablespoon mirin
1 tablespoon sake
1 tablespoon sugar
1 tablespoon miso
1 teaspoon gochujang
1 tablespoon ground sesame seeds

Poke several holes in the pork shoulder loin with a fork.

Rub 1 teaspoon of salt and a little pepper all over the pork.

Leave the pork at room temperature for 30 minutes.

Peel and cut the Daikon radish into thin strips and chop the carrots.

Place the Daikon and carrots in a bowl and rub in 1/2 teaspoon of salt.

Once softened, let the vegetables sit for 10 minutes.

Heat 1 tablespoon of sake and 1 tablespoon of sugar in a 600-watt microwave for 40 seconds to evaporate the alcohol and dissolve the sugar.

Dissolve 1 tablespoon of miso and 1 teaspoon of gochujang in the heated sauce.

Mix in 1 tablespoon of ground sesame seeds to prepare the miso sauce.

Squeeze the rice with your hands to remove all the water (if applicable).

Wipe off any moisture from the surface of the pork with kitchen paper.

Place the pork in a heat-resistant container and pour 1 tablespoon of sake over it.

Cover the container with plastic wrap and microwave at 200 watts for 9 minutes.

Remove the container from the microwave, turn the pork over, cover with plastic wrap again, and microwave for another 9 minutes at 200 watts.

After a total of 18 minutes of cooking, wrap the pork in two layers of aluminum foil and let it rest for at least 15 minutes to finish cooking with residual heat.

Remove the aluminum foil and cut the pork into bite-sized pieces.

Check the inside of the pork; if there are any red parts or if it's not cooked through, arrange it on a plate and heat it in the microwave while checking.

Arrange the pork on a plate with leafy vegetables, salted vegetables, and miso sauce.
