Melt 3 tablespoons of salted butter in a pot over medium heat.

Add 1/2 cup of chopped onion and season with a little salt and pepper. Sauté until the onion is soft, avoiding color.

Stir in 3 tablespoons of flour to create a roux, cooking for about a minute until the raw flour taste cooks out.

Add 2 pints of home canned tomatoes (or a 28 oz can of crushed tomatoes) to the pot and stir until it thickens.
