1 can (28 oz) whole or diced tomatoes
1 small onion, diced
3 cloves garlic, minced (½ tablespoon)
2 cups chicken broth
1–2 tablespoon sugar
1 teaspoon dried basil
½ teaspoon red pepper flakes
Salt & black pepper to taste
1/2–1 cup heavy whipping cream
1–2 tablespoon(s) butter or olive oil

Using a medium Dutch Oven, add butter (or olive oil if using) and heat until butter is melted over medium heat. If using olive oil, heat just until the olive oil is shimmering.

Add diced onion and cook for about 3 minutes or until onions are soft and translucent.

Add minced garlic and cook for approximately 1 minute or until the garlic becomes fragrant.

Once the garlic is fragrant, add tomatoes (with juices), chicken broth, sugar, basil, crushed red pepper flakes, salt, and pepper. If using whole tomatoes, break up the tomatoes with a spoon.

Stir to incorporate all ingredients, bring to a simmer, and reduce heat to low; cook for 20 - 30 minutes.

After 30 minutes of simmering, blend soup using an immersion blender or regular blender until your desired consistency is achieved.

Turn off heat, and add heavy cream (if using) and heat through.

Taste and adjust for seasoning, add additional salt and pepper as needed.
